Well, begin by making clear what you want to achieve, in terms of functionality before thinking technical realization. When you mix in the same level "density of events", "amplitude", and "fft", I am worried about what you want to focus on. Define the function you want to achieve first. Then, indeed, Max/MSP/Jitter is a very good environment in which it is easy to link graphics and sound. Jitter tutorials will give you some ideas. Study tutorials 27 and 28, for instance.
