But you can run a mac mini without monitor/keyboard... The easiest is to just don't let anybody come close with liquids. Or you setup the internal camera with some jit.cv patch to dectect beverages and shut down in case somebode is too close... ;-) A beer over a closed Macbook isn't good either by the way...
