Arne Eigenfeldt has made some interesting pedagogical patches used for teaching - a virtual analog synthesizer that teaches the basic concepts of analog synthesis, and MaxScore, an algorithmic score editor for creating FM Csound scores (We should point out here that you can now do playback of Csound scores using MSP, of course).

Mark Phillips has created the Ma(r)xTutorials, a set of Max tutorials intended to assist the beginning Max user. It features a nice collection of small demos and models for the beginner that supplement the Max tutorials. His site also includes the standalone Max/MSP application called the Electro-Acoustic Music Primer, which teaches some basic audio principles and common synthesis techniques.
Shigeto Wada publishes MAX i MUM, a Max/MSP magazine in Japanese and English that includes tutorials and perspectives on composition.
